Autumn Breakfast


Rise and Shine!
What is it that wakes me up every morning......?
My beautiful son and husband giggling in bed?
The deafening alarm clock hurling me out of bed to train my anything but eager clients at the gym?
Filtered sunshine sparkling through the windows?

Yes. All of these things. But mostly....
My stomach growling!!!
By 7:00 am, it is certainly time for me to "break" the "fast". All night long my body does strenuous work; repairing and rejuvenating. It surely deserves a feast come morning!
Autumn inspires every bit of me....I am ready for apples and pumpkins and cinnamon and hearty breads...can you tell I am excited? Are you hungry yet? GOOD!

I would love to share with you one of my most favorite Autumn breakfast recipes. It is simple and lovely...and best of all, it will keep you full until lunch!

Autumn Pumpkin Oatmeal
-serving of old fashioned oats
-3 heaping spoonfuls of freshly pureed or canned pumpkin
-brown sugar, honey, or you other favorite sweetener to taste
-dash of cinnamon and nutmeg
-1/2 cup or so of vanilla almond milk
This is easy...combine all ingredients together to taste! Warm and delicious...and babies love it, too!

  1. Oh that sounds so good. I like shredded coconut in my oatmeal. Have you tried that?
    We are in a pumpkin shortage. There was a poor harvest last year. Perhaps I will try this with fresh pumpkin from my garden. Take care.

  9. That breakfast sounds so delicious...almost like pumpkin pie! By the way, pumpkin pie is good for breakfast to. ;) Your photos have such a warm, pretty light quality to them.

  10. Sounds delicious. Being Scottish, we are very keen on porridge and add all sorts of things to ours - raspberries, mixed spice and honey is our favourite. But my son loves pumpkin so much - I will try this out for him. Thank you, xx

  12. I was so thrilled to stumble across your blog! I grew up in Bethlehem, PA... with a beautiful, tall birch tree in my backyard, nonetheless! I become a vegetarian at twelve growing up in Bethlehem, and am now a vegan and find a great deal of inspiration from blogs written by people who are close to nature.   13. Okay did I mention I absolutely can't get enough of your blog??!!! Seriously you need to post more so I can get more inspired!!! My favorite Autum breakfast meal is; warm and nourishing apple cinnamon rice pudding. . . Oh my goodness yum!

    I use leftover brown rice (2cups)
    1 cup 1/2 and 1/2 or full fat coconut milk
    1 TB coconut oil or safflower oil
    3 TB cinnamon
    1 cup cooked apple
    1 teaspoos agave or brown sugar

    simmer until mushy and good!

    Seriously makes the whole kitchen smell like Fall! I like to include apple cider topped with Whip cream (milk or soy both work) and sprinkes of cinnamon on top, bonus if you have caramel to drizzle on top!!!!!!!!


    mmmm, now I'm hungry!!!!!!

  15. Just wanted to let you know my daughter and I had this for lunch today. It was so yummy and warming on a blustery,rainy day. All I could hear from my daughter were yums and mmmmmms.
